So, for the last few months I’ve been developing a chocolate cake recipe for The Englishman who lives with Weasel and MoT. I’m quite proud of what I came up with, usually I just adapt recipes or chuck things into a pot pretty much at random but this is the first recipe I came up with on my own. It’s behind the cut.

Gateaux de Andrew

Cake
16oz sugar
5oz butter
3 separated eggs
16oz plain flour
3 1/2 oz cocoa powder
1/4 pint boiling water
1/2 pint sour cream
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract

Preheat oven to 180 C and grease two cake tins.
Put cocoa in a bowl and mix into a paste with the boiling water (leave it to cool down). Cream the butter and sugar with the egg yolks. Sift in flour, baking powder and baking soda, add cocoa mixture, sour cream, and vanilla extract. Whisk egg whites until stiff and fold gently into the cake mixture. Divide it between the cake tins.
Bake for about 40-50 minutes. Let the cakes cool and shrink.
Slice each cake (once it’s cooled) through the middle to make four layers.

Filling
3oz butter
8 oz spiced dark chocolate
2 tablespoon light corn syrup
2 tablespoon Camp coffee

Mix butter, chopped chocolate, syrup and coffee and heat in a double boiler until melted. Stir until smooth. Let it cool. Spread between each cake layer. Cool the cake in the fridge.

Icing

1/4 pint double cream
4oz dark chocolate

Boil cream and add chocolate stirring until it melts and is smooth. Strain into a bowl and allow to thicken (put in fridge to do this quickly). Whisk until it’s smooth and shiny. Spread over the cake with a thick knife. Decorate, put in a fridge if you don’t mind it losing it’s shine.
